Well - it was fantastic - brined a 1kg chicken (just my wife and I for tea) in salt/sugar/star anise/chilli solution for a few hours. Then I used the larger trivet that I had purchased - cooked the chicken + some smashed potatoes (chat potatoes boiled till soft - allow to cool - then squash with heel of hand, drizzle with olive oil - add sea salt and Tuscan spices and roast on trivet next to chicken). All up cooking time approx 1.5 hours at approx. 170-180C. Very nice!
