I want to upgrade my 14 inch wheels to 17 inch but I'm not sure what the stud pattern is. Is it a ford or holden stud pattern?

Seems like a big jump in size. You might struggle to get a tyre that fits. Either way the rolling radius should stay similar to ensure you don't run into any fowling issues. The other critical issue is ensure the new tyres are rated for light truck use and can carry the weight.

14 to 17 more than likely won't fit the wheel arch, check out carbibles.com they have great calculator which will show you sizes.

are they 6 stud already?
if they are, they (Jayco) use the Landcrab stud patten

if they are 5 stud patten, they will be the Ford

Landcrab???

I hardly think that Jayco would use an ancient Morris 1800 wheel.

Additional: They even have their own web site
http://www.landcrab.net/

sorry @PhilD I was on some other forums - and it was a slip of the typing.......... instead of land cruiser

and I forgot that the old Austin1800 was also called a Landcrab.........
